Summer is finally here and I cannot think of a more appropriate dessert to start this blog other than a no-bake cheesecake topped with Gin and Tonic jelly. Gin and Tonic is the classic summer cocktail in UK, popularly referred to as G&T. Gin has a bitter after taste and hence tricky to made dessert with it.
When I saw this recipe on the cover of Delicious magazine, I knew I had found my cover recipe to kick off my website too. It is light, refreshing, slightly boozy, and ofcourse sweet enough. This serves 6-8 people depending on how much of a sweet tooth they have. I did adjust the recipe a bit in terms of sugar I feel the middle layer needed slightly more sugar so I added 100 gms instead of 80 gms in the original recipe. I used a 20 cm cake tin which wasn’t deep enough as I realised later (this recipe make too much for my tin size so please adjust your tin accordingly). Learnt my lesson and lived to tell the tale to you, I shall plan better next time. I poured leftover jelly into some old creme brulee jars that you get from supermarkets. Also the leftover middle layer can be reused as a filling for any tart or mini tarts topped with strawberry, raspberries or blackberries etc.
